I had a really HEAVY discussion all weekend long on Facebook – about some current events that I’m not ready to discuss yet on the blog. It left me physically and emotionally exhausted. I thought about not blogging at all this week, but I don’t want to do that either.
So let’s just take a step back and talk about something light hearted and fun.
PUMPKIN SPICE FLAVORED EVERYTHING!!!
Even though we are still sweating it out in the 80s and 90s here in South Carolina, the trees are starting to turn, indicating that fall WILL come soon. Please, please, come soon! But the true sign that fall is here: Pumpkin spice flavored everything, everywhere. It’s awesome. If you love pumpkin spice! Which I do!
I usually go crazy with it and by Thanksgiving I am DONE, but by the time September rolls around, it’s open season again. Woohoo!
This year I am happy to get to WEAR pumpkins and pumpkin spice too! Plus purchase of these wraps will benefit our Ovarian Cancer Fundraiser – 30 Days of Teal!
But let’s be honest. I love to EAT it most. (And drink it in my coffee!)
My favorite pumpkin spice recipe is really yummy and really not too bad for you!
Pumpkin Pie Dip
1 80z Container of Cool Whip (use light or fat free to reduce cals!)
1 (16 oz) can of Pumpkin Pie filling
1 small box of Jell-o Instant Pudding (Cheesecake, Vanilla, or White Chocolate Flavor)
1 tsp Cinnamon Spice Blend (cinnamon/nutmeg, pumpkin spice, or Allspice will work)
1 16 oz box of Gingersnaps
Combine everything except the Cool Whip and Gingersnaps. Mix well and then fold in the Cool Whip. Put in a serving dish (or carved out pumpkin!) and serve with Gingersnaps.
This is an awesome, yummy snack and takes less than 5 minutes to prepare!! Win, win situation!!
