Goat Cheese & Mushroom stuffed chicken breast {21 Day Fix}

I had an appointment with my rheumatologist the other day and both of us were shocked at the amount of weight I’ve gained over the last six months. Poor eating choices, too much wine, stress, not getting good sleep, and sitting at a desk for hours on end while trying to get lose the cape! published were all contributors to this.

I feel terrible. Not only do I have auto immune diseases fighting me, now I’m way overweight, lethargic, and generally crabby. That is no way to live – especially not with three young kids in the home.

Those of you who have followed me know the ups and downs of my diet and fitness journey. I’ve gone from Couch to 5K and then to 10K, I’m gluten free in hopes that it will help my inflammation and joint issues, and I’ve tried all kinds of different health and fitness programs, including Whole 30 (which I loved, by the way!) As I considered how to move forward, I considered re-starting Whole30, but it felt a little overwhelming to me. While I felt amazing after completing it last time, it was a month of slaving to my food needs. It took a lot of preparation and planning, and I just don’t feel I could do that right now.

So instead, I reached out to my friend Jennifer. We went to high school together and were recently re-connected on Facebook. I saw her fitness posts and man, she is FIT! I’ve been watching her pictures of her workouts and weight loss over the past few months, and I decided to ask her about it.

She’s a BeachBody coach. After talking to her about what I wanted to do, she recommended I try the 21 Day Fix. It’s an exercise plan matched with a meal plan – like 90PX and many of the plans. But Jennifer has a group of women my age who are on a Facebook page together, encouraging and motivating each other. And that’s what I really need right now. Sharing the pain with people doing the same program.

So, I decided to give it a try. Day 1 was yesterday. Even though I’ve been walking on my treadmill regularly for the last few weeks, that cardio fix kicked my rear! And I’m sore today.

But eating is the hardest for me. I love food. And wine. And more wine. But like Jennifer reminded me, it’s only 21 days. And, I remember from other programs, the first three or four days are going to be ROUGH but then it’s going to feel incredible.

So, I made it through day 1. The container system is a little bit confusing and overwhelming at first, but I’m getting the hang of it.

And last night, I made an incredible dinner.

Goat Cheese & Mushroom Stuffed Chicken Breast with Quinoa & Spinach. Yummy.

Goat Cheese & Mushroom stuffed chicken breast {21 Day Fix}
Recipe Type: Entree

Cook time: 25 mins
Total time: 30 mins
Serves: 4-6
Ingredients
  • 4 chicken breasts
  • Goat cheese
  • canned mushrooms
  • seasoning
Instructions
  1. Preheat oven to 400
  2. butterfly the chicken breasts and pound them down
  3. crumble goat cheese onto one side of the open breast
  4. place mushroom bits on the cheese
  5. close breast and place on greased baking sheet
  6. sprinkle seasonings as you like
  7. bake at 400 for 25-30 minutes

Serve it up with some quinoa or rice and a veggie, and you’ve got a delicious and filling meal.
